Easy Peanut Butter Cookies


Making cookies can be a real labor of love (read: a pain in the butt). However, isn’t it nice to just be able to whip up a whole batch in less than 30 minutes sometimes? These easy peanut butter cookies are great for those moments when you have unexpected guests show up, for when the cravings are #real and you’re not in the mood, and for when the kids just won’t stop asking for cookies (not a parent yet but I assume this is how kids are). These really are great for any day though and you’ll want to thank me once you smell the aroma of these baking up!


  • 1 cup peanut butter (I personally like crunchy for these)
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract


  1. Preheat oven to 350°F. Line a sheet pan with parchment paper and set aside.

  2. In a mixing bowl, add all of the ingredients and mix with a spatula until it is all well combined.

  3. Scoop by the rounded tablespoon onto the prepared sheet pan.

  4. With a fork, make the classic cross hatch pattern on the tops of each of the cookies. The cookies should be flattened when you make these marks.

  5. Bake for 17-20 minutes or until the cookies are nice and golden around the edges.

  6. Remove from oven and allow to cool for a few minutes before placing on a wire rack to cool completely.
